Raspberry Vinaigrette

Eat something green on for St. Pattys Day!

For this yummy salad you will need:

extra virgin olive oil
raspberry wine vinegar
dijon mustard
1 pear
crumbled blue cheese
chopped pecans

Mix oil, vinegar and dijon... season with salt and pepper to taste. Throw in your lettuce of choice, toss salad, top with up a yummy pear, sprinkle with blue cheese and pecans (or better, sugar coated pecans)! You have an easy peasy delicious salad!
I made this by accident. I was at the store specifically looking for champagne vinegar and the store had every kind of vinegar known to man, EXCEPT champagne vinegar. (what gives?)  When I saw the raspberry vinegar, I figured I would give it a try.... I was pleased with the results!

You could replace the raspberry vinegar with champagne vinegar and take out the dijon for a different and even better taste.  You could also make it with white wine vinegar and a pinch or two of white sugar and that tastes awesome too!
