Breakfast Bowl

When I saw this recipe on my sister's blog, Pinch of This, That & the Other, I knew I wanted to try it! It looked amazing.  Over the weekend I was inspired to give it a try.  I (as always) made quite a few substitutions.  Instead of ham I used bacon and instead of an egg over easy I made it with scrambled eggs. 

I made my very own delicious breakfast bowl!

What you need:

4 eggs, scrambled
whole wheat bread
cooked bacon
grits
cheddar cheese

While I cooked the bacon, I preheated the oven to 375.  I lined a muffin tin with whole wheat bread, pressed firmly to form a circle all the way around the muffin hole.  I put grits on the bottom... because I'm from South Carolina and I can't have breakfast without grits! Then I poured the scrambled eggs on top of the grits, stuck in some broken pieces of cooked bacon and topped with cheddar cheese.
I cooked them for about 10 minutes... or however long it took to feed the baby after popping them in the oven!

My sister and her husband are both amazing cooks.  Every time I cook something new my daughter asks, "is this Aunt Nicky's recipe?"  or after she takes a bite and decides that she likes it she will just assume it is an "Aunt Nicky Recipe."
