2 cups white rice
10 oz. package of frozen broccoli, thawed but not cooked3 boneless chicken breasts, cooked and cut into 1 - 2 inch chunks
2 cans of cream of chicken soup
1 c. light mayonnaise
1 1/2 tsp. curry
1 tsp. lemon juice
8 oz. shredded cheddar cheese
1/2 c. buttered bread crumbs
First cook the chicken and the rice.
In large casserole dish layer the bottom with rice, chicken and broccoli. Next, mix the remaining ingredients, (except the bread crumbs) and pour over dish. Top with buttered bread crumbs and bake in oven at 350 for 1 hour.

I love casserole recipes they are so versatile. I like using sour cream instead of mayo though for some reason I just don't like the flavor of mayo. Yum.
