For some reason this weekend I was craving a black bean and mango salad. Which is very odd for me, considering I've never had black beans... or mangos... and I'm usually a very picky eater.
While working hard to lose the pregnancy weight, I've been working to make a lifestyle change instead of "dieting". The funny thing is, it is working wonderfully. (currently 10lbs less than my pre-pregnancy weight!) The more healthy foods I eat, the more my body craves healthy foods. Even little things like I now eat lettuce and tomatoes on my turkey sandwiches - which I always just liked plain. The more water I drink the more my body craves as well.
Anyway, I looked up a few different black bean salad recipes and then kind of threw together one of my own.
What you will need:
1 can black beans (low sodium, no salt added)
corn (frozen, fresh or canned)
1 clove garlic
1 TBL olive oil
1 mango
cherry tomatoes
1 avocado
1 lime
garlic powder
onion powder
chicken broth
First, heat olive oil in a pan. Then add the minced garlic. Sautee the garlic for a minute until brown. Add corn. Cook corn until slightly golden.
In a sauce pan, cook black beans in chicken broth, garlic powder and onion powder. Boil for 5 minutes and then drain.
In a large bowl add cut cherry tomatoes, cut avocado, cut mango, beans and corn. Squeeze lime over everything, mix together.
Serve warm or cold.... not only was it delicious but extremely filling!
Next time the only thing I would change is add shelled edamame!

I find it funny that you've never had black beans or mangoes, but you were craving them! This does sound good and perfect for a hot summer day! Congrats on the weight loss :)
